Extractor hoods must be made of a non-flammable material as it is likely they will be directly above or very near to a source of heat or open flame.

The ducting and filters on ventilation and extractors should be easy to maintain and should be cleaned often so as to discourage the build up of grease and dirt, which could cause a blockage.

As well as making sure that all fumes are taken out of the building, the ventilation system should also bring fresh air into the kitchen.

In the catering business, as in all professions, regulations note that employers must do as much as possible to assess possible risks in the work space and take necessary steps to avoid them.

Failure of the employer to get appropriate ventilation and extractor fans fitted in their restaurant's kitchen shows a failure in looking after the wellbeing of those whom they employ, be they the head chef, or a kitchen porter.
