Avoiding personal injury in the commercial kitchen

Kitchen work can often be rushed and hectic with chefs preparing food as swiftly as possible and waiting staff dashing in and out to serve customers. However, it is vital that an employer maintains a safe working environment to avoid any incidents after which an employee could claim personal injury compensation.

Falls, trips and slips
Falls, trips and slips are frequent accidents in the kitchen and are often caused by spillages. The floor should always be mopped immediately after a spillage occurs – if the floor is still not dry, a "wet floor" warning sign should be installed.

A fall could also be caused by loose or damaged floor tiles which haven't been well maintained. The employer should always ensure that the floor is in a safe condition to work on and is devoid of any hazards which could potentially cause an industrial injury.

Harmful substances
Exposure to harmful substances, such as certain cleaning products, can cause rashes and skin conditions such as dermatitis. Even handling some foods can irritate skin problems, such as eczema. To prevent skin irritation, an employer should provide cleaning products which are skin-friendly and also have non-latex gloves available for use.

Other potential hazards
When preparing food, knives should always be treated with care. A sudden slip could cause a deep cut. An employee should always follow knife-skill procedures in order to use sharp kitchen utensils correctly.

A kitchen presents a major risk of fire, so electrical and gas appliances should be checked regularly and an employer must have carried out a full risk assessment on all of the kitchen facilities.

All staff using kitchen equipment must be fully trained and the equipment should bear a British Standards Institute kitemark and comply with the Provision and Use of Work Equipment Regulations (PUWER) 1998.
