Once the signal reaches the train, onboard computers convert this into a display that the driver can understand using a key that involves colour-coding as well as numerical instructions for speed.

This is one of the reasons why Eurostar has a good safety record, barely smirched by train accidents beyond a well-known 2000 derailment. Even in that incident, only six people suffered personal injury, none serious.
